My name is Chelsea, but those closest call me Bun. I am 21 and in my final year at University College London. I am originally from East Sussex, love my dog, and I'm addicted to houmous. For the last 4(ish) years, I have been interested in nutrition and its impact on our general health and wellbeing. I am currently working for an amazing health partnership and this year, I will be writing my dissertation on eating disorders. I should also mention that I have an irrational obsession with Jamie Oliver and I am determined to work for him one day! Even if it is just washing dishes in Jamie's Italian... (Kidding, Dad) I was around 16 when my friend Weaze and I helped each other to lose six stone collectively by exercising and trying out healthy recipes together. Weaze will always be such an important part of my life because of this. Learning about the good, bad and ugly of different foods was such an eye-opener, and I've been hooked on healthy eating ever since. Don't get me wrong, I'm certainly not a perfectly sculpted 'clean eater' with impossible resistance to Dairy Milk and camembert. I am a happy and healthy size 10, and that's how I will stay. I love white wine far too much to lose any more weight... I try to go to the gym 3-4 times a week, but some weeks it just doesn't happen. And that's okay! I live with my friend Jenna. I've known Jenna for 19 years and she is like a sister to me. We have a very similar relationship to food... We will eat porridge and salads all week, and then one evening we will go to Gordon's Wine Bar and get through copious amounts of wine and cheese. It's all about the balance... I imagine I'll mention Jenna a lot in this blog - we often eat together and she pretty much is my other half. I have recently bought a tonne of amazing books filled with amazing healthy recipes, notably Jamie Oliver's Everyday Superfood, Millie Mackintosh's Made, Gizzi Erskine's Healthy Appetite and Ella Woodward's Deliciously Ella. For each book, I wanted to try 90% of the recipes but the next day I would just go back to my usual routine of porridge, omelettes, and chicken salad. So, I've started this blog to force myself to try at least three new recipes per week. The recipes will come from the books that I have, other blogs, magazines and my friends that all have their delicious go-to healthy recipes. I will be doing this from a student perspective, so I will be trying to find super food on a not-so-super student budget. Peace and love, Chelsea Bun x

APPLE AND RASPBERRY CRUMBLE

October 16, 2015October 16, 2015 madebychels

Okay, admittedly this picture looks more like lasagne. But I promise it was so good and made me feel so autumnal (my FAVE season). I also did not feel guilty at all for having this for breakfast most mornings this … Continue reading APPLE AND RASPBERRY CRUMBLE

JAMIE’S SKINNY CARBONARA

October 8, 2015October 8, 2015 madebychels

So, I have to admit, I didn’t execute this recipe very well. Jamie made it look so easy on his TV programme last week but sadly I don’t have very advanced culinary skills and I could really tell the difference … Continue reading JAMIE’S SKINNY CARBONARA

VEGGIE CON CARNE (BUT IT REALLY DOESN’T HAVE TO BE)

So, week 2 of blogging… This will be my first week back at uni so my first time management test. And you can probably already tell from the poor quality of photos on this post… I made this chilli just … Continue reading VEGGIE CON CARNE (BUT IT REALLY DOESN’T HAVE TO BE)

ELLA’S BUTTERNUT SQUASH RISOTTO

October 4, 2015 madebychels

Honestly, I wasn’t overwhelmed by this recipe. Admittedly, I started cooking on a Friday night after 3 cocktails with Chow and I did not have any of the recommended nutritional yeast (which I imagine contributes towards the flavour). So, this … Continue reading ELLA’S BUTTERNUT SQUASH RISOTTO

ELLA’S SWEET POTATO BROWNIES – CHOCOLATE ORANGE

September 30, 2015 madebychels

Ella Woodward’s sweet potato brownies are impossibly good! Initially, I was hesitant to try this recipe as there were a few ingredients that I couldn’t find in the supermarket, namely brown rice flour and raw cacao powder. However, it is absolutely worth … Continue reading ELLA’S SWEET POTATO BROWNIES – CHOCOLATE ORANGE

September 30, 2015 madebychels

I was reading Ella Woodward’s Deliciously Ella on the train back to London today, and this recipe popped out at me straight away. I bought a vegetable spiralizer at least 6 months ago, but I haven’t had much luck finding … Continue reading ELLA’S COURGETTE NOODLES WITH AVOCADO PESTO
