My name is Chelsea, but those closest call me Bun. I am 21 and in my final year at University College London. I am originally from East Sussex, love my dog, and I'm addicted to houmous. For the last 4(ish) years, I have been interested in nutrition and its impact on our general health and wellbeing. I am currently working for an amazing health partnership and this year, I will be writing my dissertation on eating disorders. I should also mention that I have an irrational obsession with Jamie Oliver and I am determined to work for him one day! Even if it is just washing dishes in Jamie's Italian... (Kidding, Dad) I was around 16 when my friend Weaze and I helped each other to lose six stone collectively by exercising and trying out healthy recipes together. Weaze will always be such an important part of my life because of this. Learning about the good, bad and ugly of different foods was such an eye-opener, and I've been hooked on healthy eating ever since. Don't get me wrong, I'm certainly not a perfectly sculpted 'clean eater' with impossible resistance to Dairy Milk and camembert. I am a happy and healthy size 10, and that's how I will stay. I love white wine far too much to lose any more weight... I try to go to the gym 3-4 times a week, but some weeks it just doesn't happen. And that's okay! I live with my friend Jenna. I've known Jenna for 19 years and she is like a sister to me. We have a very similar relationship to food... We will eat porridge and salads all week, and then one evening we will go to Gordon's Wine Bar and get through copious amounts of wine and cheese. It's all about the balance... I imagine I'll mention Jenna a lot in this blog - we often eat together and she pretty much is my other half. I have recently bought a tonne of amazing books filled with amazing healthy recipes, notably Jamie Oliver's Everyday Superfood, Millie Mackintosh's Made, Gizzi Erskine's Healthy Appetite and Ella Woodward's Deliciously Ella. For each book, I wanted to try 90% of the recipes but the next day I would just go back to my usual routine of porridge, omelettes, and chicken salad. So, I've started this blog to force myself to try at least three new recipes per week. The recipes will come from the books that I have, other blogs, magazines and my friends that all have their delicious go-to healthy recipes. I will be doing this from a student perspective, so I will be trying to find super food on a not-so-super student budget. Peace and love, Chelsea Bun x

No exaggeration, I get through a bag of sweet potatoes every week. Easy. Over Christmas, this recipe became one of my staples because the cinnamon makes it so festive! I even managed to persuade my Mum to replace roast potatoes … Continue reading FESTIVE SWEET POTATO MASH

FLORA’S BURNS NIGHT ROASTED NEEPS

February 4, 2016February 4, 2016 madebychels

Thanks to Flora’s multi-cultural background, we recently had another excuse for a dinner party: Burn’s night. Last Saturday I tried haggis and swede for the first time (as well as playing Cards Against Humanity for the first time), and all … Continue reading FLORA’S BURNS NIGHT ROASTED NEEPS

AN APOLOGY FOR MY ABSENCE

February 4, 2016 madebychels

So, according to WordPress, I have not written a blog post in 71 days. There’s no legitimate excuse for this… But I’m going to try anyway. On Saturday 28th November 2015, a group of us celebrated Thanksgiving (inspired by Flora). For … Continue reading AN APOLOGY FOR MY ABSENCE

MY GO-TO WINTER PORRIDGE

One of the first recipes that I posted was my ‘go-to breakfast smoothie’. However, now that London is suddenly facing Arctic temperatures, some comforting porridge has become my breakfast go-to. I know that there are tonnes of porridge combinations to … Continue reading MY GO-TO WINTER PORRIDGE

OAT AND RAISIN COOKIES

November 16, 2015November 16, 2015 madebychels

My friend Flora recently brought to my attention that 90% of my recipes so far have required a blender. (She did this in a very polite way… By saying that a blender was on her Christmas list whilst we were … Continue reading OAT AND RAISIN COOKIES

ELLA’S CHIA BREAKFAST PUDDING

November 16, 2015 madebychels

So, I’m really undecided about this one. In theory, it’s amazing: you make it the night before so if you’re rushed in the mornings, it’s ready to go. It also filled me up until lunch and I always have a … Continue reading ELLA’S CHIA BREAKFAST PUDDING

SWEET POTATO BLUEBERRY PANCAKES

November 15, 2015 madebychels

So I still absolutely stick by my banana and blueberry pancakes. However, I am aware that some people don’t eat eggs (Annie) or bananas (also Annie) so here’s an egg-less banana-less alternative. Sweet potatoes are one of my key food … Continue reading SWEET POTATO BLUEBERRY PANCAKES

CAULIFLOWER CRUST PIZZA

November 13, 2015 madebychels

I have wanted to try a healthy pizza crust recipe for aaaages. The only problem was that there were tonnes of different variations available – broccoli crust, quinoa crust, some with lots of cheese involved. And anybody that knows me well, … Continue reading CAULIFLOWER CRUST PIZZA

ELLA’S PESTOS

November 8, 2015November 8, 2015 madebychels

We always have peas in the freezer and a basil plant on the windowsill so pea pesto is one of my go-to recipes. I love pesto (almost as much as houmous), and it goes great with pasta, as a pizza … Continue reading ELLA’S PESTOS
