AVOCADO BAKED EGGS

I have wanted to try avocado baked eggs for ages. Avocados and eggs are two staples in our flat, but I was always a little unsure about cooking avocado. It turned out that cooking the avocado really didn’t affect the texture at all, and this was delicious! It was also very filling so no need to graze all morning until lunch.

Shopping list: 1 avocado, 2 eggs, chilli flakes, bread

If you’re hungry, this can serve one. However, Charles had to finish mine so you could easily split this between two!

  1. Preheat the oven to 22o degrees Celsius

  2. Cut the avocado in half, remove the stone, and place in a ramekin. Scoop out a little of the flesh to make more room for the egg.

  3. Crack 1 egg into each avocado half. I only had large eggs, so there was a lot of egg white spilling over. So, I recommend just using medium eggs.

  4. Season with salt, pepper, and some chilli flakes

  5. Bake the avocados in the oven for around 15 minutes, depending on how runny you like your egg.

  6. Make your toast

I have also seen recipes add chopped chives and bacon at the end, which I’m sure is also delicious!
