My family are from Tiptree, Essex – the home of Wilkin and Sons. And anybody who knows me, knows that I am addicted to Wilkin and Sons lemon curd. I went back to Tiptree this weekend and indulged in scones with clotted cream and lemon curd.. it was heavenly.
My addiction has recently got the better of me and, as a result, I have been having lemon curd on toast every morning for weeks (with pancakes mixed in now and then). This probably is not okay… So, I decided to try a new breakfast recipe.

Bircher muesli is not like the Alpen-style muesli you can buy, it’s more like overnight oats. And, similar to overnight oats, it took just a few minutes to prepare and was all ready to go in the morning.
Shopping list: 1 apple, 45g oats, 40g dried cranberries (or raisins), 15g sunflower seeds, chia seeds, 125ml coconut milk, maple syrup, a handful of berries (I went for blueberries)

This recipe serves one, but you can easily prepare three servings to get you through half of the week.
I bought a really cute jar from Tesco this week to soak my muesli – it was only £3.50 and I think I’m going to buy a few more to store my couscous and brown rice etc.

1) Grate the apple into a mixing bowl
2) Add the oats, cranberries, sunflower seeds, 1 tablespoon of chia seeds, coconut milk, 1 teaspoon maple syrup, and the blueberries
3) Place the mixture into an airtight jar and leave in the fridge for at least 6 hours, but this will stay good for up to 3 days.
