MY GO-TO WINTER PORRIDGE

Banana and cinnamon porridge

One of the first recipes that I posted was my ‘go-to breakfast smoothie’. However, now that London is suddenly facing Arctic temperatures, some comforting porridge has become my breakfast go-to.

I know that there are tonnes of porridge combinations to choose from, but this banana and cinnamon version is my favourite and is much cheaper than using berries in the winter.

Shopping list: 40g oats, 200ml coconut milk, banana, cinnamon, chia seeds, mixed dried fruit and nuts

You could also use almond milk or ordinary milk, but the sweetness of the coconut milk goes well here!

Breakfast time:

1) Place the oats, coconut milk, 1 banana, 1 tablespoon of cinnamon, and one tablespoon of chia seeds into a bowl. Stir until the cinnamon is mixed in.

2) Place in the microwave for 3-4 minutes, depending on how you like your porridge. You can also heat everything up in a saucepan, but the microwave is the early morning lazy option!

3) Stir well so that the banana disintegrates into the porridge. Then sprinkle a handful of dried fruit and nuts (dried cranberries are my fave) over the top and enjoy.
