
My friend Flora recently brought to my attention that 90% of my recipes so far have required a blender. (She did this in a very polite way… By saying that a blender was on her Christmas list whilst we were discussing this blog!) So, that inspired me to bake something that did not require a blender, as my NutriBullet was actually an early Christmas present for me too!
These cookies are probably my favourite baked goodie that I’ve made so far. Whilst the others have been delicious, they can turn out quite dense. However, these cookies really suit a chewy and sticky texture so they turned out really well. A recipe that I think even my sugar-addict Dad would enjoy!
Shopping list: 3 bananas, almond butter/peanut butter, coconut oil, maple syrup, 180g oats, cinnamon, chia seeds, raisins.

Gimme the cookies:
1) Preheat the oven to 200 degrees Celsius
2) Place the bananas into a mixing bowl and smash them up with a fork until they’re smooth
3) Add 2 tablespoons almond butter and 2 tablespoons of peanut butter (you can just use one or the other here, but I quite like using a combination. I used crunchy peanut butter so there were some peanut chunks in the cookie).
4) Then add 1 tablespoon of coconut oil and 4 tablespoons of maple syrup. Mix until a sticky mix forms. A lot of my ingredients had been kept in the fridge so I put my mixing bowl in the microwave at this point to make it easier to mix.
5) Stir in the oats, 1 tablespoon of cinnamon, 2 tablespoons of chia seeds and a handful of raisins (depends how raisin-y you want your cookies to be!) You could substitute the raisins for dried cranberries for some festive cookies.
6) Grease some baking parchment or a baking tray with some coconut oil. Scoop heaped tablespoons of the mixture onto the tray and then use the back of the spoon to squish into giant cookie shapes.
7) Bake for 20-23 minutes, depending on how big you made the cookies and how gooey you want them to be.
Leave to cool for about 5 minutes and then enjoy! These cookies and lots of green tea got me through my reading week this week. I miss them already…
