
So, I haven’t done any baking in a little while and I missed having a plate full of guilt-free goodies on the side of the kitchen. These cookies are for Jenna, who has two vices: cookies and pizza. (She is a total nightmare when she’s been drinking, she requires distraction from all food outlets).
Shopping list: 200g ground almonds, 200g hazelnuts or peanuts, 200g buckwheat flour (or alternative), 100ml maple syrup, 5 medjool dates (pitted), 3 tablespoons raw cacao powder, 3 tablespoons chia seeds, 2 tablespoons coconut oil, 1 orange, 2 tablespoons nut butter (peanut, almond or cashew)
So, ideally I think that hazelnuts would work better in this recipe but they are super difficult to find! The only place I could find them was Planet Organic and they were £9 for 250g?!!! In case you have similar luck to me, unsalted peanuts work fine too.
Ready, set, bake!
1) Preheat the oven to 200 degrees Celsius.
2) Place the nuts into a food processor (you need quite a large processor for this, I couldn’t use my Nutribullet) and blend until a flour forms. Then add all of the remaining ingredients (including both the zest and juice of the orange) until a cookie dough forms.
3) Scoop out some of the mixture and roll into a ball. If you use a tablespoon as a measure, this should make around 20 cookies. I didn’t measure mine so they turned out a little bigger and probably made about 12, so it’s up to you. Flatten the ball onto a baking tray using a spatula (not one with gaps in though… I made this mistake)
4) Bake for about 20 minutes
I served mine with the raspberry jam that I made for my apple and raisin scones. However, you could also serve with frozen yoghurt or chocolate spread or enjoy on their own!
